Keep food out of the “Danger Zone”! Some foods require time and temperature control to maintain safety and limit the growth of pathogenic microorganisms or the production of toxins. In this course you will learn which foods are most at risk for harboring pathogens, how to control time and temperature to minimize bacterial overgrowth, and the proper way to take the temperature of foods throughout the food preparation process.
